Caramel, Marshmallow Popcorn

So around this time it seems like everything is either Pumpkin spice, caramel something or apple cider. Although all those taste yummy I like to keep my drinks simple, just a hot cocoa for me. When it comes to sweet treats I do have a sweet tooth and pairing something sweet with popcorn it's like the best of both worlds! this is one of my go-to recipes for the holidays. I like to make a big batch and cuddle up with some blankets and watch movies with the family while passing a bowl of this yummy-ness around!

1 package microwave popcorn popped
1/2 cup butter
1 cup brown sugar
2 Tbsp. light corn syrup or honey
1/2 tsp. vanilla
12 large marshmallows
I substitute the corn syrup for a can (14oz sweetened condensed milk)


1. Pop popcorn until done, remove any un-popped kernels.
(you don't want to mix the kernels into the ones you will eat  because a bite into that will hurt your teeth) 
2. Melt butter in a medium saucepan over low heat.
3. Add brown sugar, corn syrup (or condensed milk), vanilla and marshmallows.
4. Turn heat to medium and stir until marshmallows are melted and mixture is smooth.
5. Pour over popcorn and stir in until popcorn is evenly coated.
(you can add any type of candy or sprinkles to make it more festive)
6. Store in an airtight container.
